Hi.
We have 3 companies within Xero for £/$ and € and see these as a single Xero instance with 3 option / companies to choose from depending on the region. I have successfully integrated Xero to HubSpot for the Head Office (£ sterling) and this works perfectly for our usage. I now want to "create invoice" from HS but be able to pick which company in Xero has the client/invoice details. Can this be done and if so how?

We have a HubSpot-certified app in the marketplace, Invoice Scheduler for Xero - that supports multiple Xero instances (only on our enterprise plan though).
