I just tested this in my portal as well and yes, date properties don't seem to be supported. You could post a suggestion to include date properties in the HubSpot Ideas section of the community: https://community.hubspot.com/t5/HubSpot-Ideas/idb-p/HubSpot_Ideas
As far as workarounds go, there are some alternatives to HubSpot's own integration with Google Sheets:
Depending on your deal volume, you might just stay within the limits of the free plans.

Hi @pbmartin , I'm a bit late to the conversation. In case you haven't figured it out yet, you should try out Airboxr—it's on the Hubspot marketplace: https://app.hubspot.com/ecosystem/9210258/marketplace/apps/marketing/analytics-data/airboxr. It allows you to build and save queries from Hubspot right within your GSheet... and it includes the Close Date property under Deals. Disclaimer: it is my product.
