If your contact in HubSpot/Salesforce is associated with a Salesforce Opportunity (I believe it has to be a primary contact) and the deal is moved to closed won, then if the connector setting to automatically transition lifecycle stages is turned on, then yes the HubSpot Contact will be moved to lifecycle stage = customer.
