Do you know if there is a feature where I can add attendees but instead of contacts within the CRM, I could add my sales team members? This would help my sales team track logged meetings without muddying the reporting for how many meetings our contacts are in.

This is not possible at the moment and looks like HubSpot isn't planning on implementing features for adding internal attendees anytime soon either (see this HubSpot Ideas post and the product team's reply from April 2020).
