Activites (notes, emails, calls, tasks etc) cannot be exported, at least not with the native features of HubSpot. (There are third-party solutions on the HubSpot app marketplace which can help with that.)
If you can avoid it, I'd recommend not trying to wipe your existing portal clean: If you export your deals, you'll also have to export all associated records. Only by importing records of all objects will you be able to restore the associations in HubSpot. If you only export/import deals then these will float around without associations to contacts and companies.
It's definitely possible but it can be a lot of headache and there might be other ways to approach the issue that has sparked your question.
