We create automated deals via a company workflow based on a scheduled meeting type (=demo). Unfortunately, activity-based workflows do not exist, so we can't re-enroll companies based on scheduled meetings. We have more than one deal per company as some dropout and then are re-engaged later.

@Humashankar I think this can officially be solved by creating a Contact workflow and selecting the trigger type "When an event occurs." Event would be "meeting booked", and "call and meeting type = Demo scheduled"
If I understand correctly, the last meeting type property will be updated on the deal record but we want a distinct deal for each demo. How would this look for companies?
While the previous approach monitors demo activity, it doesn't generate separate deals for each demo. To address this, We can also try creating unique (Manual Deal Creation via Workflows) for each demo with companies in HubSpot, give a try with it and let me know if this helps.
Set up a company workflow that triggers when a new meeting is scheduled with a company that already has an existing deal.
Use the "Create Deal" action to duplicate the existing deal, creating a new deal with identical information.
Update the "Last Meeting Type" property on the new deal to "Demo" using another action in the workflow.
