As far as I know, it's not possible to set up a required prompt for associating a contact and company at a specific deal stage like you can require specific properties. However, if you have a Professional or above HubSpot subscription, you could create a workflow that would send an internal notification email/create a task if a deal reaches a certain stage and has less than one associated contact/company.
Requiring updates to company records is in a similar boat here. The required properties are specific to deals, but you can:
Update the required properties for initially creating a company record
Create a workflow that will send an internal notification email/create a task if a company record is associated with a deal in a certain stage and is missing key company information
Create those company properties at the deal level, set them as required for the particular stage(s), and create a workflow that will copy those property values from the deal to the company
