We have an inbound email inbox where prospects will complete a form on our website and it creates an email alert.  We would like to have that email automatically create a record in hubspot where we can better manage the inbound leads.  Is that possible?

If the page the form is hosted on has a HS tracking code you should be able to map the data into Hubspot. 

Or you can replicate the Form in HS and embed the code in the needed page.

Hi  @JMiller27 , if this form connected to your HS account? If so the record should be automatically created. 

Not sure I completely understood the use case, but with more detail would be glad to help.

No, it's not connected to our Hubspot account.  A prospect will fill out the form below from our website and it sends the latter to our shared outlook inboxes.  I guess I'm trying to connect this form to Hubspot somehow.
