It seems like a recent change but the HS app is covering the reading pane and is a pain. Does anyone know how to make outlook responsive to opening the HS app and resize accordingly?
I am not aware of any changes to Office365 Online that would create this sort of behavior. On desktop, of course, the VTSO add in is not supported at all for the New Outlook, but that is several months old at this point.
I unfortunately don't have the ability to check on my end to see if I can replicate either. Sorry that I can't be of more help here!

We've been having the same issue for around a week now. Very frustrating. Seems to be an issue across all outlook users who use add-ins, not only HubSpot.
I'm going to bet you are running into the same issue I am on the "new" outlook. The icon two to the left of the "settings" cog is the "My Day" tab. It will insert the space required so that HubSpot's Addin doesn't sit overtop of a chunk of Outlook. I was coming in here to open a thread about it but saw your issue and wondered if you are seeing the same thing I am.

Outlook not resizing to fit HS app

@ShaunR I think you are on to something here. I switched back to the old Outlook and got a pop up that says "New" outlook doesn't work with add-ins...The old app is working as it should however the web version of outlook still covers over the reading pane. I prefer to use outlook on the web but may have to revert to using the old app until there is a fix for this.
As shown below, the add-in is covering the reading pane. Up until the last week, the reading pane would resize to allow the add-in to stay pinned and still be able to see the whole reading pane.
This happens on both the Outlook on the web and in the outlook app.

1. Is this happening when you are writing a sales email in your Outlook? 2. In which situation exactly? 3. Is this only happening with Outlook? 4. Is this the HubSpot Sales Outlook add-in? 5. Are you trying to use the Hubspot add-in in Outlook mobile application? 6. If you can share a screenshot of the behavior, it would be great, please.
