Emails sent in HubSpot not showing up properly in Gmail sent folder

I'm sharing this since I've been beating my head against the wall for weeks, trying to determine why this was happening.
I could see new emails sent via HubSpot in my Gmail sent folder, but anytime I replied to an existing thread in HubSpot (I use the tasks feature a lot), the email wouldn't show up in the Gmail sent folder.
This made searching in Gmail difficult and effectively created two separate communication databases, which was maddening.
In the end, all you have to do to ensure threaded emails sent in HubSpot log properly in Gmail is navigate to settings/inbox and turn off the fallback HubSpot email (see attached screenshot)

When I send an individual email (not marketing emails) through the CRM, I do not see a copy in my email provider (GSuite) sent, and more importantly, I do not see an email in my email provider inbox when my contact responds. I only see it on the contact record within the CRM or as a HubSpot App notification. If I respond within the CRM, I see an email in my GSuite inbox from "me" with no indication of the contact's email address.
Use case: going through tasks, or just contacts in general, and sending an email through CRM.
Problem: I later realized if they sent a reply, I don't see it in my email provider inbox, I can only see their reply if I search the contact through the CRM and check 'activity' or 'email' within that contact. I may not remember all the people I emailed directly from the CRM, so there's no way for me to know who sent a response.
Request: I'd love to be able to see emails (not marketing emails) sent directly from the CRM within the general activity feed (or whatever is replacing the activity feed) and also within my email provider (I use GSuite). I'd also like to be able to see their replies in those places, not just within the CRM. If I filter activity to show emails sent, it shows any email I sent from Gmail and through the CRM and I don't see how to distinguish where it was sent from.
