Contacts and conversations not being logged when user is in CC or BCC

We've been using Hubspot for a while now and we have never had a problem with logging conversations or creating emails by cc'ing or bcc'ing hubspot. Today it suddenly doesn't work anymore. One of my sales associate has sent 20+ new contact emails to potential clients and none of them were created as contacts in Hubspot. I then tested from my email which has the same domain and nothing logged as well. Nothing was changed on our email host side or in hubspot's preferences. What can we do to fix this?
