I've tried everything and installed Google Tag Manager properly onto our company Shopify website, but still when I run the GTM debug, it can't read key information from HubSpot forms (see screenshot).
Can someone help me with this? I want to be able to track how many people click the submit button, and not just track submissions. The reason being is that the form at one point was not working, so when people would click "submit" we didn't actually recieve a submission.
This issue with submissions not going through has since been resolved, but we would still like to track button clicks on all of our forms hosted on Shopify from now on. To get more in-depth reporting and troubleshooting. But this is not possible if we can't see Click_ID, for example, and it keeps coming up as "" or "undefined".

I would recommend that you Double-check your GTM setup to ensure that the triggers and tags are configured correctly. Make sure you have a trigger set up to capture clicks on the submit button of your forms. Have you tested the form submissions and clicked tracking in an incognito window to rule out any browser extensions or cache issues that might be interfering with GTM.
I would recommend connecting with HubSpot Technical Support, as Support is included in your subscription and they will be able to provide real time assistance for this matter, including hopping on a screenshare if necessary.
