Could you provide more detail about the reports you're looking for?
First report: When you say "which contacts", are you looking for contact names? (In that case, you can only fit so many into one report) Or are you interested in the amount of contacts called, displayed by sales person? If it's the latter, this is what your cross-object report settings (Contacts + Activities) could look like:
Second report: Are you interested in showing the Lead status of contacts who were called, displayed by sales person? If yes, here's what a configuration could look like:
Let me know if that works for you. Lead status could also be changed for Lifecycle status, and depending on your organisational setup, Contact owner might make more sense than Activity assigned to (Activitity).
If you want to set a time frame for this report, just add a filter for activity Create date.

If you're not seeing an option to change this to a rolling date range, then that's currently a limitation of the product. The report builder you're using is still "young". I'm hoping that this will be added soon.

Yes the timeframe shown on the report. I placed a filter to receive a week worth of calls. Is there a way to change that filter without having to go into the edit section of the report

Thank you for your reply it helped with a bit of what I was looking for.
I used Contacts and Sales Activities
Then in the filters I have what you suggested:
My only issues now is I cannot find a way to edit the activity date. I don't want to edit the activity date each time I run the report or just have the full month report and change it in excel. I also noticed that there is not a way to pull the date and time the call was made only the date the activity happened.
