I see in my Hubspot sales extension panel that I can create a task and due date associated with an email. It will then show up in my task list in hubspot. Could it be possible that there is no way to create a task and assign it to a team member from the Outlook sales panel? That seems like a basic requirement. Help appreciated!

Just to confirm, you're creating Tasks in Outlook via the contact pane of the HubSpot Sales add-in? I yes, I can confirm that this is expected behaviour: you can only see or create tasks there that are assigned to you. At this time, it's not possible to assign Tasks in the Sales add-in to a different user.
