At present, the HubSpot Outlook Sales Extension does not support logging emails or interacting directly with custom objects from within the extension interface. It currently allows email logging only to standard objects such as Contacts, Companies, Deals, and Tickets.
While not a perfect solution, here's an alternate approach you can try:
Create & Configure Custom Objects
Navigate to Settings > Objects > Custom Objects in HubSpot.
Define your custom object’s properties and set up associations with standard objects like Contacts or Deals.
Use Associations
When you associate custom objects with Contacts, Companies, or Deals, those relationships help link relevant CRM data together.
Log Emails to Standard Objects, Then Manually Associate
Log emails via Outlook to the related contact or company.
Then, within HubSpot, manually associate those logged emails with the appropriate custom object record.
Note - The functionality may change with future updates, so it's worth checking HubSpot's release notes/update periodically for new features in the Outlook extension.

Currently, the HubSpot Sales Extension for Outlook (also called the HubSpot Sales Add-In) only supports default CRM objects: Contacts, Companies, Deals, and Tickets. Unfortunately, custom objects are not yet supported directly within the Outlook extension interface.
