Update Property of Multiple Contacts with Email Plugin

When sending a bulk email to multiple contacts, is there any way to update a single property on all the involved contacts with the Hubspot email plug-in all at once, or does it have to be done one by one using something like contact profiles?
I'm mainly trying to find a efficient way to capture documents that have been sent out to contacts in order to see who the documents are going to and when they were sent out. As far as I'm aware, the document tool in Hubspot does not allow you to see what contacts have received certain documents.
If I could mark a specific property depicting a certain document being sent on all the contacts of an email, I could report on that property.
Additionally, I found another thread mentioning a custom report on "Attached File ID's" that might work, but it's a little clunky just seeing the ID number and not the name of the attachment, but it does at least let you see what attachments are associated with a contact and when they were sent. Trying to see if there are any other solutions that might be better than this.

@ZAHoopes hi! Another idea for this might be to send the email through a workflow, then edit the property as the second step. Here's an example of the set-up:
Once you turn on the workflow, then you can manually enroll your list of contacts:
This would mark the property as soon as you send it. You'd have to do this for each send, and the property would stay marked unless you clear it each time. But that would do what you're asking.

Are you looking to add a new property using the email plugin, update an existing property with the email plugin, or update the property information for multiple contacts at the same time? or something else?
