This documentation explains how you can enable and disable the sync between connected accounts, in addition to how to completely remove the connection from within either Gmail or Outlook 365.
The connected inbox is specific to your Hubspot Sales login information, so as long as no one else logs in to your Hubspot Sales account, they will not be able to access your mailbox. If they have their own Hubspot Sales log in accounts, they can connect their own inboxes.
