Self open notifications in Outlook after accepting cookies + blocking pictures and my domain

I receive self-open notifications when I open an email in my desktop's Outlook to send a follow-up. That is, I see in the contact's record that the email has (supposedly) been opened. This occurs even if I open an email that I've sent that has bounced as undeliverable. I've tested it directly several times by opening an email I've sent, then going to that Hubspot record - I immediately see that the email was opened one minute ago or whatever.
I don't have a fixed IP address; I called my Internet company and they confirmed it's 100% not possible to change my IP to a static one. I have already changed my settings so that pictures are not automatically downloaded, and also added my domain to the "never log" setting.
I've also followed the steps for allowing cookies, and uninstalled-reinstalled the HubSpot 365 Outlook extension (after checking that I have Outlook 365), to ensure I have the latest version of the extension. I also checked that my Outlook is up to date. A possibly related issue is that Hubspot asks which domain I want to continue to every time I open Outlook (I only have one domain).
The problem continues after all these fixes, and it's sometimes quite difficult to deduce if the recipient has in fact opened my email.

Has there been any more resolution to this problem? I'm experiencing the same thing after having followed the exact same steps. I, however, can't speak to my IP address, I'm not sure if it's static or variable.
I added our own domain to the "Never Log" list so I wasn't getting skewed results, or notifications, when our own people were opening and/or responding to emails.

Hi @JRaygoza - that has to be frustrating. Unfortunately, I don't have a solution with a variable IP address. I'll ask around on this to my team I work with, and see if anyone has an idea.
I might also think about adding your use case to the Ideas Forum, and ask for a way for HubSpot to ignore a user's interactions with the emails they send.
