Right click name within TO field and add to CRM.

I'm sure that I'm missing the most obvious settting but where do you enable the option to add a contact listed within the TO/CC/BCC line to Hubspot CRM?
Yes, I know that it will randomly try to add contact in CRM on the right side, as I have blured out in the screenshot but surely, I can add a contact by right-click on the email addess and say add to CRM too.

Short A: No.
Longer A:
The HubSpot integration will automatically add all email addresses to the HubSpot CRM after you send the email AND if/when the 'Log' checkbox is selected.
