Outlook extension adding contact but not changes to categories

When I add new contacts to Hubspot from my Outlook email extension, I sometimes add extra info into the categories. This info is not being transferred over. How do I fix this?

I checked the Hubspot AI (https://knowledge.hubspot.com/connected-email/automatically-populate-contact-properties-with-hubspot...) is already clicked on my account, so some of these properties should be going over automatically, but this is not working. Instead of their name, they get their email!

This is strange - I'm wondering if there is any automation set up within your portal that could have an impact here - to check that I would recommend connecting with HubSpot Technical Support, as Support is included in your subscription and they will be able to provide real-time assistance for this matter, where you are able to share screenshots and specific examples about this.
