Outlook Extension well configured but no emails are consigned at contact record level

From what I understand, your Outlook extension is configured as expected, but outgoing emails are not logging to Contacts in HubSpot despite an open notification, correct?
Open notifications in HubSpot can come from several reasons, including security/bot activity from the recipient's inbox settings. Are the open notifications on your phone coming from HubSpot or Outlook? If they are coming from HubSpot, the email would have logged to the contact record. If the notifications are coming from Outlook, then you can review the requirements for an email to log here.
I want to invite some subject matter experts to see if they have any suggestions.
