Currently, the New Outlook version doesn’t support connecting emails to deals in HubSpot, so this functionality is missing due to recent changes Microsoft made to plugin capabilities. You can still log and track emails manually within HubSpot by associating them with deals from the contact record.
If connecting emails to deals directly is essential, you may consider using the legacy Outlook app until there are updates.
@PamCotton that is not accurate. the Office 365 add-in still logs to the deal, but only on select emails. some emails have 3 records for example (company, contact, deal) as options, and other emails only have 2 records available for logging (company, contact). This seems to be a bug with HubSpot in that it does not recognize that all companies associated also have a deal associated within the Outlook add-in itself. In other words, the Outlook plugin does not capture all object assocuations all the time, only some of the time
