As this article explains, emails that you forward to your forwarding address ([HUBID]@forward.hubspot.com) will be logged on the contact you sent the email to. If no contact for this email address exists, one will be created.
It is not yet possible to email Deals, as they do not have an email field. However, if a Deal is associated with a Contact, and you forward an email that was sent to that Contact, said email will appear in both the Contact and the associated Deal.
For instance, if you sent me an email which you then forwarded to your CRM, and my contact record in your CRM was associated with the deal "HubSpot", the forwarded email would appear in both my contact record and in "HubSpot" 's timeline.
