Auto-Response Email Logging in HubSpot: How does it work?

Hi all,
Recently, I have been asked by internal users about OOO emails from their contacts some of which were automatically logged back in HubSpot, some were not. In both cases, they all enabled the tracking properly once they sent out the initial emails to those contacts. We use MS Outlook.
What would be the causes in our case? I would love to learn how HubSpot log those automatic response emails. Is there any difference from other responses?
My best would be how different email providers and email clients handle OOO messages.
If the OOO is an actual reply to your email it will be logged, if the OOO is triggered before the actual delivery to the inbox (sometimes referred to as server side response) it essentially creates a new email telling the sender "nobody home" which in turn would not be logged, as technically they are not replying to the email that was send.
