It seems that the new version of the Shopify integration does not have a standard field mapping for the "unsubscribed from email" field, so 1. you have to have Ops Hub Starter to even map your opt outs from Shopify and 2. You have to map it to a custom field in HubSpot? Am I missing something?
You also can't update "unsubscribed from all email" with a workflow, you can only opt someone out from a specific subscription type, so this totally eliminates our ability to automatically update contacts who have unsubscribed from Shopify. Seems strange!

You're correct that the new Shopify integration does not include a default field mapping for the "unsubscribed from email" status. To sync opt-outs from Shopify, you do need Ops Hub Starter to map custom fields, including opt-outs. You would indeed have to create a custom field in HubSpot to capture this data from Shopify.
Regarding unsubscribing, HubSpot’s workflow limitations mean you can't update the "unsubscribed from all email" status directly—only specific subscription types. As a workaround, you could use custom properties to capture opt-out data from Shopify, and then manually update the "unsubscribed from all email" field if needed.
