I would like to create a workflow that is triggered once a contact unsubscribes or their email bounces, then I would like to mark them as non-marketing contacts and add them to a list 'unsubscribed' and remove them from all other lists. Here comes the problem, for some reason I can only remove them from static lists but they may have been added to an active list. Would I maybe have to edit the filter of my active list?
Correct, active lists cannot be updated via workflow. You would have to update your list criteria to exclude contacts where "Unsubscribed from all email" = True and where "Email hard bounce reason" is known.
While you're at it, I'd recommend excluding these contacts as well:
Email is unknown
Invalid email is true
Email domain is any of [your competitor's email domains]
