If I send the same Email as part of 2 different Workflows, will the stats in the "Emails in workflow" performance section be specific to each Workflow? Or will both Workflow details pages show the total stats for that Email?

You can view the stats based on the workflow. To ensure you see the stats from the specific workflow you can go into the workflow tool and click view > performance, then you will be able to see stats on the emails in the tool such as Sent, Delivery, Open, Clicked, Clicked-Through, Unsubscribe these can be rates or total amounts.

For more context, @Charlotte9, the email metrics for individual workflows will only show data based on the contacts enrolled in that workflow.
