I have a manual workflow that we are entering old customers into. Once they hit a certain point in the Deals life cycle, I want the workflow to stop sending the next emails.
Is that possible?

You should be able to achieve what you are looking for by creating a workflow goal based on the deal stage property.
Once a contact meets the conditions of a workflow goal, all future workflow actions are stopped.
