I would like to create a list where I can filter contacts who enrolled for a specific Email subsricption (in this case newsletter subsription) + plus filter the date the contacts entered the email subsription.
This is not something that you can filter lists by out of the box, unfortunately. However, it looks like you're on a Professional subscription and you can create a date property which can automatically be filled with a contact-based workflow:
When you create such a workflow and turn it on, only enroll contacts who meet the trigger criteria form now on. Otherwise all existing contacts would get today's date.
Natively, I'm not aware of any way to populate this date property historically, unfortunately.
Another approach would be using form date filters in lists. This would require that your newsletter opt-in is equivalent to specific form submissions. You can create your list and filter for these form submissions (see the date filter in the bottom right corner).
