If I create a custom field called "Last Call to Action" would it be possible to have that field populated with the last action a lead took to enter our system again i.e. form fill, live chat, campaign enrollment, etc
If you created one more custom field called 'recent event completed', and then have that field be updated via workflow with the most recent value from one of those 3 properties, that would mostly cover what you had in your question.

If those 3 values are the starting criteria of the workflow, and if you have re-enrollment setup, then whenever one of those values is updated, then it copies it to the 'recent event completed' custom field. This is assuming that those 3 values can be used as re-enrollment criteria (which I'm fairly confident they can be used in that fashion).
