Delete Contact & Keep Email Records in Company?

One of our contacts has moved companies so his past dead email is globally bouncing. If I delete his contact will our past emails with him stay in the company history? Or do I have to keep the contact in our database?

I just deleted a contact and their email history was deleted from the company history. And the email shows up as "HUBSPOT_GDPR_DELETED".  WHat did I do wrong?

Yes.

If you're still concerned about deleting the contact, you may simply unsubscribe or opt that contact out of marketing emails instead. No real need to delete them.
