I created a form and contact lists. my issue is the list I created only captures or saves one email(latest email being subscribe)

Don't really understand what you're asking here, but if you're testing the form yourself from the same device it knows. It thinks you're trying to update your same CRM record, so ... you'll only see that single entry in your list.

When testing forms, be sure to do it from incognito windows or a separate browser.

Just to provide additional information regarding this, the updating of contacts is due to HubSpot cookies on forms. 

If a form is filled out twice on the same cookied browser, the contact record will update as opposed to creating a second contact. 

You can learn more about this and edit the cookie settings by following the steps here.
