This was great - I managed to figure out where I could access the fields to change, however when I try and change them they're greyed out and show this message:
Is it to do with my account permissions or is just the case I don't pay for the package that allows me to change it?
Q: When I try and change [HubSpot built-in properties] they're greyed out ... Is it to do with my account permissions or is just the case I don't pay for the package that allows me to change it??
Short A: It depends.
Longer A:
Some HubSpot contact properties cannot be edited under any circumstances whatsoever on any HubSpot tier. In the case of Contact.Country, you may edit that property on free accounts. You'll just need the proper permissions.to do so.

Thank you for getting back to me so quickly! You were right, I didn't have the right level of access. Now that has been rectified, I've run into another problem.
It's telling me 'Property options can't be blank. Add content to label and value or remove this option to save' but I don't understand what is blank. Do you know what's going wrong?
