There is a way to set a hidden field in the form that changes it as soon as it submits the form. If I get some more information I may be able to be of more help.
1 - Are you wanting to change the lead status of each form submission to the same property? IE: All Form Submissions = In Progress
2 - What exactly are you looking to accomplish with changing the lead status/why?
IE: I want to change the lead status to next step because they filled out a form or
They are all brand new and I want to move them to a specific lead status
