Hi, is there a way to create a form on a landing page with checkboxes that are ticked by default and can be unticked if preferred?

To make a checkbox checked on a form, you will need to go into the form editor and click into the field which is the singular checkbox and the left sidebar should open. You can then scroll down to 'Default Value' and set the default value to be 'Yes'.
