I'd like to be able to set up a workflow with the trigger being someone clicking the 'sign up' button on my site - showing intent

Is there a way to do this via hubspot?

Essentially a basket abandonment flow

You could set up a workflow where the enrolment criteria is "contact has completed a form on ..."
