Tasks/Emails triggered on completion not date in workflow

I would be nice to be able to set up a workflow and have the tasks/emails, etc be triggered to start based on completion of the previous step, instead of off the date they entered into the workflow.

100%. Completing a task should be a possible trigger event.

I can't upvote this enough.  It drives me nuts to assign a task and have ZERO visibility into its completion without having to pull a report, etc.
