Currently, any user who has a Sales Pro seat is able to edit Products regardless of what permissions they have. I'd like to have more granular permissions for this, as I don't want my users mistakenly editing products.

I apologize for the belated update, but you may have noticed that since fall of 2020, there is now a user-level permission in "Sales" that controls whether or not a user has permission to make updates to the Product Library. We may introduce more granular permissions in the future (e.g. they can edit description, but not name or price), but it is not currently on the roadmap for this quarter or this year.
Adding our voice to the original request. Our use case: we don't want salespeople being able to change the published list price of a product and how it's charged (i.e. price itself, one time vs. recurring, period, etc.) once it gets copied into a Quote or Deal. Yet we want them to be able to apply a discount as they see fit.
+1 , The lack of control here is meaning we are considering a 3rd party tool to manage orders as currently it's just to open and unusable. If a salesperson can change the core price and can also set the discount at whatever they would like it makes it impossible to build a robust process

Our reps are now able to change product descriptions, which is causing audit issues. Also as many already mentioned before, changing the default pricing is also causing issues. Where are we with setting permissions on property level within the Product Library? (as you have on other Objects as well).
Really keen on seeing this being launched and helping the Sales/Finance/Legal team getting their time back on these manual checks and back-and-forths!
It seems crazy to have so many holes in this, we have no process that last more than 5 minutes, before it's broken with another unauthorised change. Sales Guys know they can change the product and task full advantage. it would be great as Listte1 suggests and the product/line items are an object we can work with.
@dnelson We have a major need to allow certain reps only to be able to access a subset of products.
The business case is that we have items in the product catalogue that require cetain government licences to sell and only reps with that licence can sell them. E.g. Product group 1 is available to all sellers while product group 2 is available only to sellers we give permission to and other reps cannot even see these products.
Need a way to lock down price and discounts, as having anyone who has access to these functions be able eto essentially discount a line item to 0 costs is completely ridiculous.
