Enroll contacts in workflow based on day criteria is met

Currently, we can allow actions in a workflow to operate on specific days. It would be beneficial to have a workflow that only enrolls contacts if they meet the criteria in a specific time range (criteria that isn't a date property).
Use case: Enrollment criteria is demo request submitted. The workflow should operate if a demo request is recieved on the weekend, so emails/notifications can be sent out without having the contact wait until Monday. This workflow would only need to operate on the weekend IF this criteria is met on the weekend and should not enroll any contacts if the criteria is met during work week
