Yes, please make this happen! Getting a user/customer to fill in deal-specific information is far more likely to be complete and accurate than having a salesperson collect it over the phone and then manually type it in.
It's been a year since this idea was posted and we are really hoping this will be implemented soon. It is a huge value add to our business. We would appreciate HubSpot's investment and support in making this a new feature.
Yes, another no brainer. All available fields should be available so that we can use third party tools like Zapier to get Quickbooks to fill in our deal records in Hubspot.
Maybe a short-term solution/easier fix would be to just make it an option to associate the form completion activity on a contact record to a deal and company record (automatically preferred)?

Making it an option to create summarize the form submission details as a note on a deal record.

A use case as follows - using deals for appointments at a spa as an example - you then send a survey form after the appointment but need the results to come back to the original deal on deal properties and not contact properties (because they can have multiple appointments and using workflows for this is not full proof, especially when you have comment fields which you cant set using if/then logic to set the fields on existing deals , like you could do as a workaroud with dropdown options)
