So far I haven't found a solution with a dropdown menu.
But you can insert a ticket property in form that you are creating. And what the customer fills in at 'ticketname' becomes your subject line in the conversations inbox. You can change the external name 'ticketname' into something you like yourself. For example just 'subject'.
