Create traffic reports for 1 specific acquisition channel

I would like to add a report to my dashboards including only one source of traffic, like on this picture, but with no need to click each time to exclude other channels.

It would enables me to see in a glance the evolution of my organic traffic for instance.

This is exactly what I'm trying to do, but I can't find a way to do it.

We want separate dashboards for Social, Email, channels. And in each of those, we want to see the growth in web sessions they are driving, but I can't figure out how to build a custom report that shows web sessions from just one channel source. Any help appreciated.
