It is currently not possible to create custom properties for quotes. These would be useful in quote based workflows or to use as "Personalization Token" in quote templates.

The work to enable custom properties on Quotes is in early development. We are aiming to open up a beta in December. Updating this to reflect the current status as the "Planning" stage on this forum is being removed.

We are actively planning this work to allow Quotes to have custom properties to support the use cases described here, including using them in a personalization token or within a workflow. Agreed!! My clients are disappointed that there is very limited customization within the quotes. Ex... Having pre-defined drop down options for tax, shipping carriers, being able to add both shipping and billing address, etc. Adding custom properties within these would be very helpful to get the right info in front of their potential customers.
Yes, quote template customization is limited. You can add extra sections in the template but the text in these sections is not editable on the front - when somebody creates a new quote. Developer says it is possible when we make custom properties but since custom properties are not available for quotes we might have to work around through custom objects.. Which takes extra steps when associating for colleagues and does not help preventing clutter.
Adding a thumbs up to this idea - many times clients need to customize each quote with details like scope of work or summaries, but to do that you have to create a whole new quote template just for one use. The ability to have quote properties and bring those in would solve the issue
Completetly agree, desperately need to have this customisation added to the capabilities. The ability to add Custom Properties as a "Personalization Token" is a no brainer!
