When logging an email you can set the date and time of the email (especially useful if logging an email received a long time ago - you want to see it in the right sequence in the activity feed)
BUT if the user forgets to set the correct date/time, then current date/time is stored. OK, fine. But then surely allow the user to update this when they realize their mistake?
Workaround today is to delete the email just logged and re-enter it. Not ideal!
