How much engagement gets a contact off the low engagement list?

We are working on sending a re-engagement email campaign to our low engagement contacts. These contacts are generally suppressed from our emails but we want to see if we can get a few more to re-engage. We will be sending them a few emails with some great content. What does it take for someone to be removed from the HubSpot low engagement list? Do they have to just open an email? One click? Multiple clicks? We are wondering what HubSpot's measurement for "engaged" is that will take them off the suppression list.

Short A: The recipient only nees to OPEN a single email. No other action requres.

Do you know if there is a way to view a list of contacts that were suppressed, but have become 'unsuppressed' as they have finally clicked on an email? Ideally by date - so when they became 'unsuppressed'.
