Unintuitively, it's not that simple. There is no quick resend button. Here's what you could do:
Clone the initial email as a regularr email, send the email as a regular email to this one contact. If the issue occurs again, you can use this regular email has the option "Send to more" as part of a dropdown. (Send to more is not an option for automated emails, just regular emails.)
Create another workflow that sends just the one email, don't add any enrollment criteria, manually enroll just this one contact (or other contacts sharing the same fate).
