Hello,
I'm looking to create a workflow to send a reminder email to someone when they have received the email to book a demo but hasn't actually booked a meeting in.

@KWhatley if you have the ability to add a branch after the two day delay and check whether the meeting link was submitted, that would be an alternative. If not, this won't be doable in Starter, I'm afraid.

The simplest way to achieve this is the following:
In your workflow that sends the first automated email, add a delay (however long you want to give the contact to react), for example 2 days, then add the reminder right after.
