We have a field called Balance remaining that shows the clients outstanding balance, when filtering by this, either high to low, or low to high, its filtered numerically instead of by amount

Looks like you may be using a text property to store your numbers. If so, sorting is 'alphanumeric'.

Try using a number property type to store numeric values that need to be sorted numerically.

Thats fixed the issue with values sorting, but now it only sorts the values that are in the view section, so if looking at 25 clients on the page, it only sorted these 25, not everyone, which once we pass 100 on the view, means we still cant filter by who owes the most

is there a workaround for this ?

Not sure what you're seeing (without screenshots). However, ALL values are considered in the sort when set to view 100 per page -- the maximum.
