This is currently a submitted idea to have rounding in the amount property, which in turn would translate to rounding in the reports section.
Definitely give it an upvote so you can be alerted when there is a change and add your use case so when our developers need beta testers, they can see you are interested.
The only way to edit the amount property is manually through each individual record. You would click into the deal record itself and then click view all properties > search for deal amount > select the pencil icon that appears when hovering over it. Then you can edit the amount property but as of right now, that is the only way.
