There isn't a field within HubSpot for this but as a work round you could create a workflow (depending on your HubSpot package) to populate a custom property.
I have added instructions on how would do this below:
Locate to "Settings" in the top right hand corner and then chose "Properties" from the menu on the left.
Under "Deal Properties", create a custom property called "Deal Stage before Close".
With this property, you want to make it a drop down property and add all of your deal stages, excluding "Closed Won", "Closed Lost" etc..
Once you have done this, locate to "Workflows" in the top navigation.
Create a "Deal" based workflow
The enrollment will be that the "Deal Name" is known AND "Deal Stage" does not equal "Closed Won", "Closed Lost" etc..
Then add an if/then branch - The enrollment will be: If the Deal Property, "Deal Stage" is any of {Your first deal stage}, then on the "Yes" side, click "Set Property Value". Choose "Deal" and search for "Deal Stage before Close". Choose {Your first deal stage} and click save.
You will then need to repeat step 7 for all of your deal stages.
This workflow will then copy the deal stage information over to "Deal Stage before Close" before it reaches the closed won/ lost stage.

After this I was wondering how Hubspot could make the link between any LOST or WON stage and the "last stage before close". For example, a LOST deal "Last stage before close" would have been empty. So I decided to create a last workflow to enable a LOST stage to collect the previous "Last stage before close". And it worked!
In order to check it was ok, I created a deal at 20% stage and turned it into a lost stage right after. I created a report to track the last stage before LOST with the following parameters:
My test deal turned from 80% to LOST was taken into account!
The inconvenient is that the workflow did not work on previous LOST deals as the property did not exist before today. Nevermind, It will be a good report for this new year! Hope it helps Martine

Question for you -- if a Deal Stage goes to 20%, then 40%, then closes, will this workflow show the original 20% or the last 40%? I want to make sure it shows the last, so assumingI can do that by just allowing re-enrollment. Let me know - thanks!
